La Mare Gin
Introducing our new artisan La Mare Gin! Unlike most other grain or potato based gins this new creation is derived from the traditional Jersey organic apples grown right here at La Mare Wine Estate.
From Field to Glass
Every aspect of La Mare Gin can be traced back to source. From the organic apples grown in our orchards to the Alembic Charentais Still where our skilled artisans transform the eau de vie into a gin that captures the spirit of Jersey.
1. Harvesting
3 different varieties of traditional Jersey cider apples including Harry Masters, Darlington Mill and Dabinet are organically grown at La Mare Wine Estate and harvested in October.
2. Milling
The apples are carefully sorted, washed and organised into varieties. They are then milled into a fine pulp, breaking down the fruit to release their natural juices.
3. Pressing
The pulp is then pressed, extracting all the juice from the pulp. The juice then is allowed to settle for 24 hours.
4. Fermentation:
The apple juice, rich in natural fermentable sugars, undergoes fermentation as yeast converts the sugars into alcohol, resulting in a raw cider.
5. Maturation: The ciders are transferred to individual stainless steel tanks to mature for at least 9 months. They are then blended to achieve the perfect balance of flavours.
6. Distillation: The blended cider is double distilled to create the base spirit known as eau de vie in the estate’s Alembic Charentais Still, refining the spirit and concentrating its flavours.
Infusion: The double distilled spirit is charcoal filtered, then vapour infused with a carefully selected blend of botanicals.
Bottling: Finally, the gin is bottled and labelled, ready to be enjoyed with a splash of tonic and slice of apple and mint.
