Le Mourier

This sparkling dry white wine is a blend of Seyval Blanc and Phoenix  grape varieties. It has a palate of apple, pear and bright citrus flavours with a long finish and has been crafted using only the methode Traditionelle to produce a fine mousse.  The wine has had extended cellar ageing of no less than eighteen months on lees. The yeast kept in the bottle from secondary fermentation to add the fizz. A dosage, a small amount of sugar and la mare distilled grape brandy is added before corking and wiring.

Tasting Notes

Nose

Lime, marmalade, citrus on the nose with a subtle spice of vanilla.

Palate

Ripe gooseberry and herb flavours with some yeast and oak toastiness.

Food Pairing

Quails egg with celery salt or roast Jersey turbot.
