Role Overview
The Chef de Partie role is an essential part of the culinary team at La Mare Wine Estate, working across all sections of the kitchen to deliver high-quality dishes for the café, weddings, private dining, events, and chocolate production. This position requires strong technical skills, attention to detail, and the ability to follow established guidelines and Standard Operating Procedures (SOPs). The Chef de Partie will work closely with the Sous Chef and Head Chef, ensuring consistency, food safety compliance, and smooth operations within a small, collaborative team. Flexibility is key, as the role includes supporting other areas of the business as required.
Key Responsibilities
Section Management
- Take responsibility for assigned section(s) in the kitchen, ensuring readiness and smooth service.
- Prepare and cook dishes to the highest standards, following recipes and SOPs.
- Maintain quality, consistency, and presentation across all menu items.
- Assist in pastry and chocolate production when required.
Operational Support
- Support the Sous Chef and Head Chef in delivering menus for café, events, and private dining.
- Ensure adherence to food safety, hygiene, and HACCP regulations.
- Assist with stock rotation, ordering, and inventory checks.
- Monitor and minimise food waste through efficient practices.
- Work in other areas of the business as needed.
- Team Collaboration
- Work closely with other chefs to ensure smooth kitchen operations.
- Provide support to junior team members and assist with training when required.
- Communicate effectively with the team during service and preparation.
Skills & Qualifications
- Proven experience as a Chef de Partie or in a similar role.
- Strong culinary skills and ability to work across multiple sections.
- Knowledge of HACCP and food safety standards.
- Ability to follow SOPs and maintain consistency.
- Good organisational and time-management skills.
- Ability to work under pressure and adapt to changing priorities.
- Positive attitude and willingness to learn and develop.

- Consistent quality and timely delivery of dishes.
