Pét Nat, short for “Pétillant Naturel,” is a naturally sparkling wine crafted using the ancient méthode ancestrale. This Collector’s Edition is an ultra-limited release, sourced exclusively from a single row of Seyval Blanc vines. With its vibrant fizz and lively, fruit-forward character, this wine offers a truly unique expression of our terroir. Lucky Last is a unique, small-batch wine crafted in the rush of the final day of our 2023 harvest. While working through our Seyval Blanc block, one row stood out, showing characteristics we hadn’t seen before. Seizing the moment, we handpicked this row separately, and after an hour of foot-stomping by Andrew in the grape bin, the magic began.

No yeast was added—the fermentation started naturally on day two. After four days of gentle fermenting, we chilled the must down to 1°C, aiming to stabilise the wine early. Our goal was to bottle it before the fermentation stopped to achieve a light, natural sparkle. After another four days, we brought it back to room temperature, and the fermentation resumed.

The real challenge was choosing the perfect moment to bottle. Too early, and the pressure would have been too high, risking bottle explosions (more common than you’d think!). Too late, and we’d have lost the bubbles altogether. On the 10th day, we bottled the wine carefully under gravity, ensuring consistency across the batch, and it landed perfectly at 10% ABV.

After bottling, the wine was aged for nine months to allow the acidity to mellow. A touch of sugar was added for balance, and the naturally occurring yeast contributed an unusual yet delightful flavour. We loved the cloudy, unfiltered look, so we left it as is.

Lucky Last is best served ice cold, and here’s a fun twist—give it a good shake before opening to distribute the sediment and enhance the experience.
